Restaurant Philosophy:
We all feel a national pride in traditional Bulgarian cuisine. But do we ever really ask ourselves what that is? No doubt we'll say it means regional products, recipes and traditions but if we dig deeper we'll see that those things are a shared heritage across the Balkans.
We believe that old is best and that's why here at Noah +359 we focus on tradition, but with a very modern twist.

What are you most proud of in your restaurant?
The team behind our project. The produce in our menu that we source from Bulgarian villages and the modern interpretation of old recipes.

What makes you stand out from others?
We have a specific goal, which is to preserve the regional Bulgarian and Balkan produce and flavours.

Head Chef: Milen Simeonov

Chef profile:
Born in Karlovo, Milen's career passed through Sofia and the large Black Sea and ski resorts, where he found his vocation - presenting the authentic tastes of Bulgarian cuisine to foreign guests.
