What are you most proud of in your restaurant?
The thing we are most proud with is the popularization of the Bulgarian cuisine among the increasing number of our international guests. You can find traditional Bulgarian tastes in our dishes, signature cocktails or in the local wines from our menu.

Chef profile:
My professional career started in 2003 in one of the most luxurious hotels in Sofia. The different positions I passed through in this 3-years period laid down the basis of my culinary style. In the next few years, I continued developing my qualities in several different high class hotels and restaurants in Sofia. I have always believed that the best teacher in life is the work with good professionals, whom I met in the places I worked at - SkyWay, Spaggo, Holiday Inn, Il Viaggio, Este, and from each of them I learned new and valuable things. From a couple of months I work at Floret Restaurant and Bar, where I have the possibility to apply my knowledge and capabilities and in the same time to develop my talent and creativity.
The Italian and French cuisine and tastes are the closest to my heart. The food I prepare is a result of my own interpretation of classic combinations. I love exploring new techniques, use different instruments and to improvise in order to achieve original presentation and perfect taste.
